Black bean hummus

Ingredients

  • 1 tbs lemon juice
  • 1 – 15 ounce can black beans, drained and rinsed (reserve 2 tbs of liquid)
  • 1 clove garlic, minced
  • 1 tablespoons olive oil
  • 2 tablespoons Tahini
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 – 2 tablespoons (packed) chopped fresh cilantro, optional
  • 1/8 teaspoon cayenne pepper, optional
  • 1 – 2 tablespoons fire roasted diced green chiles, optional
  • Greek olives, optional

Method

  1. In a food processor, add black beans, reserved liquid, lemon juice, tahini, garlic, and seasonings. Process until smooth, scraping down the sides as needed.
  2. Adjust seasoning.
  3. Stir in chopped optional ingredients, if using. Garnish with paprika, cilantro, and Greek olives. Serve with toasted pita or fresh vegetables.
